Pineapple Shortcakes

Ingredients
- 5 cups fresh pineapple cubes
- 3 tablespoons orange juice
- 1 16.3 ounce package biscuits
- 3 tablespoons cinnamon-sugar
- 3/4 cup heavy cream, chilled
- 2 teaspoons rum
Preparation
Preheat oven to 350 degrees . Mix pineapple and orange juice. Sprinkle biscuits with 1 tbsp. cinnamon-sugar; bake 15 minutes. Whisk cream, 2 tbsp. cinnamon-sugar and rum to soft peaks. Split biscuits; fill with pineapple and cream.
