Grilled Pineapple Pizza

Grilling pineapple brings out the fruit's natural sweetness.

  • Flour, for rolling dough

  • 1-lb. ball of pizza dough

  • 1 pineapple—peeled, cored, and sliced into 1/4-inch-thick rounds

  • 8 oz. mascarpone cheese, at room temperature

  • 2 tbsp. confectioners’ sugar

  • 1 tsp. pure vanilla extract

  • 2 tbsp. honey

  • fresh mint


On floured surface, stretch dough into 6-by-9-inch rectangle. Grill over medium heat, turning once, until grill marks form, about 10 minutes. Grill pineapple, turning once, until grill marks form, about 6 minutes. Cut pineapple slices in half. In small bowl, stir mascarpone, sugar, and vanilla; spread over pizza. Top with pineapple, honey, and mint.
