Pimiento-Cheese Hush Puppies

Ingredients

  • 4 cups vegetable oil
  • 1 cup cornmeal
  • 1/2 cup self-rising flour
  • 1 cup shredded cheddar
  • 3/4 cup buttermilk
  • 4 ounces cream cheese, diced
  • 2 tablespoons chopped pimientos
  • 2 scallions, chopped
  • Jalapeno jelly, warmed

Preparation

In large saucepan, heat oil over medium. In bowl, mix cornmeal and flour. Stir in next 5 ingredients. Working in batches, fry tablespoons of batter until golden, 3 to 5 minutes; season. Serve with jalapeno jelly.
