- 4 12 ounces bone-in pork chops
- Salt and pepper
- 1 cup flour
- 1 egg
- 1 cup hulled pumpkin seeds, chopped
- 2 tablespoons EVOO
Season pork with salt and pepper. Coat with flour, then egg, then pumpkin seeds. In batches, brown chops in EVOO in skillet, 2 to 3 minutes per side. Transfer to rack set on baking sheet; bake at 400 degrees until just cooked through, about 20 minutes.
