- 2 cups sugar
- 1/2 cup light corn syrup
- 6 tablespoons butter
- 1/2 teaspoon baking soda
- 1 1/4 cups roasted, salted pepitas
- 1/2 tablespoon flaky sea salt
In saucepan, bring first 3 ingredients and 1/2 cup water to boil, stirring until sugar dissolves. Boil undisturbed over medium-high until amber, about 25 minutes. Off heat, whisk in baking soda (it will bubble up). Pour onto oiled parchment-lined baking sheet; spread with heatproof spatula. Top with pepitas and salt. Let cool. Break into pieces.
