Pecan Macaroons

  • Makes 12Servings


  • 1 cup pecan halves, plus 12 halves for garnish
  • 7 tbsp. sugar
  • 3/4 tsp. pure vanilla extract
  • 1/4 tsp. ground ginger
  • Pinch of salt
  • 1 egg white, beaten


Line baking sheet with nonstick foil. In food processor, process 1 cup pecan halves, 6 tbsp. sugar and next. 3 ingredients until consistency of coarse sand, about 15 seconds. Transfer to bowl; gently fold in egg white. Drop by scant tablespoons onto baking sheet. Sprinkle with remaining 1 tbsp. sugar. Press one pecan half into each cookie. Bake at 350° until golden on bottom, about 15 minutes.
