Pearl Couscous Risotto with Arugula

Ingredients
- 2 1/4 cups chicken stock
- 1 cup pearl couscous
- 2 tablespoons butter
- 2 cloves garlic, thinly sliced
- 2 teaspoons fresh lemon juice
- 1/8 teaspoon ground nutmeg
- 2 1/2 ounces baby arugula
- 1/2 cup grated Parmesan
- 1/2 cup thinly sliced radicchio
Preparation
In large skillet, boil first 6 ingredients over high, covered, until couscous is al dente, 9 minutes. Stir in remaining ingredients.
