  • In large saucepan, melt butter. Add scallion whites and parsnips; cook 8 minutes. Add wine, broth and 1 1/2 cups water; bring to simmer. Reduce heat and cook 8 minutes; add pears and cook 10 minutes. Puree with cream; season and top with scallion greens.
