Peanut Chicken Noodles

Ingredients
- 4 6 ounces boneless, skinless chicken breasts
- 1/4 cup chunky peanut butter
- 3 tablespoons toasted sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 teaspoons fresh lime juice
- 8 ounces cooked, drained and rinsed soba noodles, cooking water reserved
- 1/3 cup finely chopped red bell pepper
Preparation
Preheat grill or grill pan over medium-high. Season chicken; grill 4 to 6 minutes per side. In saucepan over low, whisk next 5 ingredients until warm, 2 minutes. Toss all but 3 tbsp. sauce with noodles and bell pepper, adding enough pasta water to moisten. Slice chicken; serve over noodles and drizzle with reserved sauce.
