Peachy Grilled Cheese Sandwiches

  • 4 tablespoons butter
  • 2 tablespoons mayonnaise
  • 8 slices whole-wheat bread
  • 8 ounces sliced Muenster
  • 4 ounces sliced prosciutto
  • 1 peach, thinly sliced
  • 2 cups baby arugula


Preheat the oven to 400 degrees . On a rimmed baking sheet, warm the butter in the oven until just melted, about 3 minutes; brush to evenly coat the baking sheet.

Meanwhile, spread the mayonnaise on one side of each bread slice. On a work surface, arrange half the bread slices, mayonnaise side down. Top with the cheese, prosciutto, peach and arugula. Cover with the remaining bread slices, mayonnaise side up. Transfer to the baking sheet.

Bake, turning once halfway through cooking, until the bread is golden and the cheese melts, about 18 minutes.
