Asian Chicken Salad

Ingredients
- 1/4 cup fresh lime juice
- 4 teaspoons sesame oil
- 2 teaspoons rice vinegar
- 2 teaspoons soy sauce
- 1 1/2 teaspoons fish sauce
- 2 cups cook chicken, shredded
- 2 medium carrots, peeled and cut into ribbons with a vegetable peeler
- 1 1/4 cups thinly sliced red cabbage
- 1 1/4 cups thinly sliced green cabbage
- 2 tablespoons peanuts, coarsely chopped
- 2 tablespoons fresh cilantro leaves
Preparation
In a large bowl, whisk lime juice, sesame oil, rice vinegar, soy sauce and fish sauce. Toss with chicken, carrots, and cabbages. Top with peanuts and cilantro leaves.
