Asian Chicken Salad

Ingredients

  • 1/4 cup fresh lime juice
  • 4 teaspoons sesame oil
  • 2 teaspoons rice vinegar
  • 2 teaspoons soy sauce
  • 1 1/2 teaspoons fish sauce
  • 2 cups cook chicken, shredded
  • 2 medium carrots, peeled and cut into ribbons with a vegetable peeler
  • 1 1/4 cups thinly sliced red cabbage
  • 1 1/4 cups thinly sliced green cabbage
  • 2 tablespoons peanuts, coarsely chopped
  • 2 tablespoons fresh cilantro leaves

Preparation

In a large bowl, whisk lime juice, sesame oil, rice vinegar, soy sauce and fish sauce. Toss with chicken, carrots, and cabbages. Top with peanuts and cilantro leaves.
