Oysters with Green Apple-Jalapeno Mignonette

Servings: Makes 24 oysters


  • 1/2 cup fresh lemon juice

  • 2 tbsp. finely chopped fresh cilantro

  • 2 tbsp. finely chopped green apple

  • 1 scallion, chopped

  • 1 small jalapeño chile, thinly sliced into rounds

  • 1 tsp. sea salt

  • Crushed ice

  • 24 freshly shucked oysters, on half shell


In small bowl, mix lemon juice, cilantro, apple, scallion, chile, and sea salt for mignonette. Scatter crushed ice on platter; nestle oysters on top, shell-side down. Spoon mignonette over oysters. Serve immediately.
