Oysters with Green Apple-Jalapeno Mignonette

Ingredients
1/2 cup fresh lemon juice
2 tbsp. finely chopped fresh cilantro
2 tbsp. finely chopped green apple
1 scallion, chopped
1 small jalapeño chile, thinly sliced into rounds
1 tsp. sea salt
Crushed ice
24 freshly shucked oysters, on half shell
Preparation
In small bowl, mix lemon juice, cilantro, apple, scallion, chile, and sea salt for mignonette. Scatter crushed ice on platter; nestle oysters on top, shell-side down. Spoon mignonette over oysters. Serve immediately.
