  • Heat EVOO in dutch oven over medium-high heat; brown chicken; transfer to plate. Add onion, carrots and celery to pot; cook 3 minutes. Add pear, broth, 1 cup water, brandy and sage. Return chicken to pot and bring to boil; transfer to 350 degrees oven until cooked through, 25 minutes.
