Oatmeal-Quinoa Bowl

Ingredients
- 2/3 cup steel-cut oats
- 1/3 cup quinoa, rinsed
- 1/4 cup brown sugar
- 2 tablespoons minced crystallized ginger
- 1 tablespoon mosasses
- 1 teaspoon ground cinnamon
- 1/4 cup mascarpone
Preparation
In pot, boil 4 cups water, oats, quinoa and 1/4 tsp. salt. Simmer, stirring often, until tender, 25 minutes. Stir in next 4 ingredients; divide among bowls. Top with mascarpone.
