Ingredients

  • 1 tablespoon grainy mustard
  • 1 tablespoon light molasses
  • 1/8 teaspoon cayenne
  • 4 salmon fillets
  • 2 cups store-bought cooked lentils
  • 1/2 cup minced red onion
  • 1/4 cup EVOO
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons red wine vinegar

Preparation

In bowl, whisk first 3 ingredients for glaze. On baking sheet, season salmon; brush with glaze. Roast at 450 degrees until flaky, 8 minutes. In bowl, toss remaining ingredients; season.
