Mushroom Crepes

Ingredients

  • 6 shallots, sliced
  • 4 tablespoons butter
  • 1 1/2 pounds sliced mushrooms
  • 1/3 cup port
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons minced fresh rosemary
  • 3/4 cup creme fraiche
  • 8 crepes
  • Chopped parsley

Preparation

In large skillet, cook shallots in butter over medium, 3 minutes. Add next 4 ingredients; cook, stirring, 10 minutes. Stir in creme fraiche. Fill crepes; fold into quarters. Top with parsley.
