Mushroom Chicken

Ingredients
- 4 skinless, boneless chicken breasts
- 3 tablespoons EVOO
- 8 ounces mushrooms, sliced
- 1/3 cup chopped shallots
- 1 14 ounce can chicken broth
- 1 1/2 tablespoons flour
- 1 teaspoon chopped thyme
Preparation
Cook chicken in skillet in half of EVOO over medium, 10 minutes. Transfer to platter. Add remaining EVOO and vegetables to soften. Whisk in broth, flour and thyme; simmer 5 minutes. Return chicken to skillet.
