Moroccan Lamb Soup

Ingredients
- 1 pound ground lamb
- 2 carrots, chopped
- 1 red onion, chopped
- 4 cloves garlic, sliced
- 1 1/2 tablespoons harissa paste
- 1 1/2 teaspoons ground cumin
- 4 cups chicken stock
- 1 can (14.5 oz.) stewed tomatoes
- Greek yogurt
- Sliced fresh mint
Preparation
In large pot, cook first 6 ingredients over medium-high, stirring occasionally, until vegetables soften, 10 minutes; season. Add stock and tomatoes. Simmer, 20 minutes; season. Top with yogurt and mint.
