Moroccan Eggplant Queso

Ingredients
Cheeses
- 1 lb. crumbled goat cheese
- 1 lb. grated American cheese
Toppings
- 1 cup chopped store-bought eggplant caponata (may be labeled eggplant appetizer)
- 1/3 cup chickpeas, coarsely chopped
- 1/4 cup harissa paste
- 2 tsp. toasted cumin seeds
Dipper
- Pita chips
Preparation
Preheat the oven to 400°. In a large baking dish or ovenproof skillet, mix the cheeses. Bake until brown and bubbly in spots, about 20 minutes. Add the toppings, then get dipping!
