Moroccan Cauliflower Salad

Ingredients
- 1/2 cup white balsamic vinegar
- 3 tbsp. EVOO
- 1 tsp. honey
- 1/4 tsp. ground cumin
- 1 large cauliflower, broken into large florets and thinly sliced on a mandoline
- 1 cup shelled pistachios, lightly toasted
- 3/4 cup finely chopped dried apricots
- 3 scallions, thinly sliced
Preparation
In large bowl, whisk first 4 ingredients; season. Add remaining ingredients; toss to coat and season.
