Molten Chocolate Mini Cakes

This chocolate cake is extra decadent—and dangerously easy!

Servings: Makes 4 mini cakes


  • 1 cup (4 oz.) chopped chocolate (70% cacao)

  • 1 stick salted butter, chopped

  • 3/4 cup sugar

  • 3 large eggs

  • 1/3 cup unsweetened cocoa powder

  • Espresso or coffee ice cream, for serving


Bring saucepan of water to simmer over medium. Place chocolate and butter in medium metal bowl; set over saucepan. Whisk chocolate and butter until melted, about 3 minutes. Off heat, whisk in sugar, then eggs and cocoa powder. Divide among four greased 6-oz. ramekins. Bake at 350° until tops are just set, about 15 minutes. Top with ice cream.
