Mexican Pimento Cheese Dip
You'd better make a double batch, because this easy pimento cheese dip will disappear FAST.

Ingredients
2 1/2 cups shredded pepper Jack (about 8 oz.)
1/2 cup plus 2 tbsp. sour cream
1/4 cup mayonnaise
1/4 cup chopped fresh cilantro, plus more for garnish
1 tbsp. fresh lime juice
1 tsp. ground cumin
1/4 tsp. cayenne, plus more for sprinkling
veggies for serving (such as small carrots, radishes, mini bell peppers, and cherry tomatoes)
Preparation
In medium bowl, mix cheese, sour cream, mayonnaise, 1/4 cup chopped cilantro, lime juice, cumin, and 1/4 tsp. cayenne. Season dip. Transfer to serving bowl. Top with more chopped cilantro. Sprinkle with cayenne. Serve with veggies.
