Mexican Pimento Cheese Dip

You'd better make a double batch, because this easy pimento cheese dip will disappear FAST.

  • Serves 8Servings


  • 2 1/2 cups shredded pepper Jack (about 8 oz.)

  • 1/2 cup plus 2 tbsp. sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup chopped fresh cilantro, plus more for garnish

  • 1 tbsp. fresh lime juice

  • 1 tsp. ground cumin

  • 1/4 tsp. cayenne, plus more for sprinkling

  • veggies for serving (such as small carrots, radishes, mini bell peppers, and cherry tomatoes)


In medium bowl, mix cheese, sour cream, mayonnaise, 1/4 cup chopped cilantro, lime juice, cumin, and 1/4 tsp. cayenne. Season dip. Transfer to serving bowl. Top with more chopped cilantro. Sprinkle with cayenne. Serve with veggies.
