Ingredients

  • 1/2 cup chopped fresh flat-leaf parsley
  • 1/3 cup EVOO
  • 2 tablespoons drained capers
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons chopped fresh oregano
  • 1 clove garlic, peeled
  • 4 cups (packed) herb salad mix
  • 1 cup halved cherry tomatoes
  • 4 cups Green Pilaf, warmed
  • 2 cups shredded Roasted Chicken Thighs, warmed

Preparation

In a food processor, blend the first 6 ingredients with 1/4 cup water until the herbs are finely chopped; season with salt and pepper. In a large bowl, toss the salad mix with the tomatoes; season. Divide the pilaf, chicken and salad among plates. Drizzle the chicken with the parsley vinaigrette.
