Ingredients

  • 5 bell peppers (a mix of red and yellow), thinly sliced
  • 4 tablespoons olive oil
  • 2 1/2 tablespoons sherry vinegar
  • 1/4 teaspoon crushed red pepper
  • 12 ounces linguine, cooked
  • 1/4 pound deli salami, sliced
  • 1 cup grated Parmesan
  • 2 tablespoons chopped parsley

Preparation

In skillet, cook 1 first 4 ingredients with 1/4 cup water over medium, covered, 8 minutes. Toss with pasta, salami and cheese; season. Top with parsley.
