Triple-Pepper Pasta

Ingredients
- 5 bell peppers (a mix of red and yellow), thinly sliced
- 4 tablespoons olive oil
- 2 1/2 tablespoons sherry vinegar
- 1/4 teaspoon crushed red pepper
- 12 ounces linguine, cooked
- 1/4 pound deli salami, sliced
- 1 cup grated Parmesan
- 2 tablespoons chopped parsley
Preparation
In skillet, cook 1 first 4 ingredients with 1/4 cup water over medium, covered, 8 minutes. Toss with pasta, salami and cheese; season. Top with parsley.
