Lemongrass Chicken with Cilantro & Chiles

Slightly sour, slightly sweet, this dish is a chicken dinner winner.

  • 2 tbsp. grated peeled fresh ginger

  • 1 tbsp. finely chopped lemongrass

  • 4 cloves garlic, grated

  • 1 tbsp. honey

  • 1 tsp. fish sauce

  • 4 boneless, skin-on chicken thighs (about 2 lb. total)

  • 2 tbsp. olive oil

  • sliced red chiles and fresh cilantro leaves, for garnish


In medium bowl, whisk ginger, lemongrass, garlic, honey, and fish sauce. Add chicken; toss until coated. Let marinate for 10 minutes. In nonstick skillet, heat oil over medium-high. Add chicken, skin-side down; cook until browned and cooked through, about 5 minutes per side. Garnish.
