- 2 teaspoons lemon zest
- 2 tablespoons kosher salt
- 1 tablespoon coarsely ground black pepper
- A pinch granulated garlic
- A pinch cayenne
- 4 skin-on salmon fillets (about 1 lb.)
In bowl, mix first 5 ingredients. Brush fish with EVOO, sprinkle with rub and pat to adhere before grilling.
