Lemon, Mascarpone & Strawberry Pie

Start to Finish: 25 minutes (Plus 1 hour for chilling)

  • 16 oz. mascarpone cheese

  • 1/2 cup heavy cream

  • 1 cup confectioners’ sugar

  • 1 tsp. pure vanilla extract

  • 1/2 tsp. salt

  • 1/4 cup lemon curd

  • 1 graham cracker piecrust (9 inches)

  • 8 oz. strawberries, hulled and halved

  • chopped pistachios, for garnish


In bowl, using electric mixer, beat first 5 ingredients on medium-high until just smooth, 30 to 45 seconds. Spread lemon curd, then mascarpone and cream over crust. Top with strawberries and pistachios. Chill until set, about 1 hour.
