Lemon-Ginger Cookies

Ingredients
- 1 cup flour
- 3/4 cup confectioners' sugar
- 1 4 ounce stick chilled salted butter, diced
- 1/4 cup minced crystallized ginger
- 1 teaspoon lemon zest
- 1 1/2 teaspoons fresh lemon juice
- 1 teaspoon ground ginger
Preparation
In food processor, pulse all ingredients until clumps form. Roll into 1-inch balls. Place on 2 parchment-lined baking sheets; press into 2-inch rounds. Bake at 350 degrees until golden, 12 minutes.
