- 1 tablespoon butter
- 2 top loin strip steaks (boneless, 1 1/4 lbs. total; bone-in, 1 3/4 lbs. total), about 3/4 inch thick, trimmed
In a cast-iron or other heavy skillet, melt the butter over medium-high until the foam subsides. Season the steaks with 1/2 tsp. salt and 1/4 tsp. pepper. Cook until browned, about 4 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 minutes. Trim the steak from the bone; slice thinly across grain.
