  • 1 rack lamb (8 bones; about 2 lbs.)
  • EVOO


Preheat grill to medium-high. Using the bones as a guide, cut rack into 4 double chops. Brush lamb with EVOO; season with kosher salt and black pepper. Grill, turning once, 12 to 14 minutes for medium-rare. Let rest 5 minutes.
