Kale Salad with Grilled-Cheese Croutons

Instead of slicing the grilled cheese into squares, you could also use small cookie cutters to make fun shapes.
Kale Salad with Grilled-Cheese Croutons

  • 3 tbsp. EVOO, plus more for brushing
  • 1 1/2 tbsp. white wine vinegar
  • pinch of sugar
  • 8 cups torn kale
  • 1 cup thinly sliced red onion
  • 2 slices white bread
  • Dijon mustard
  • 2 slices Fontina


In large bowl, whisk 3 tbsp. EVOO with vinegar and sugar. Massage with kale and onion; season. Make a sandwich with bread, mustard and cheese; brush with EVOO. In skillet, cook over medium heat until golden on both sides. Cut sandwich into squares and sprinkle on salad.
