Kale & Barley Salad

Ingredients
- 4 tablespoons fresh lime juice
- 3 tablespoons EVOO
- 1 jalapeno, seeded and minced
- 2 teaspoons lime zest
- 4 cups baby kale
- 2 cups pearled barley, cooked and cooled
- 1/2 cup cilantro leaves
- 6 scallions, chopped
- 4 radishes, cut into matchsticks
- 1 avocado, sliced
- 1 ounce queso blanco or feta, crumbled
Preparation
In a large bowl, whisk lime juice, EVOO, jalapeño and lime zest. Toss with next 5 ingredients; season. Top with avocado and cheese.
