Kalamata-Goat Cheese Grilled Cheese

Olive bread, goat cheese, and artichoke hearts combine to make an extra-flavorful grilled cheese.

Ingredients

Spread

  • 1/4 cup mayonnaise

  • 1 clove garlic, grated

Bread

  • 8 slices kalamata olive bread

Cheese

  • 1/2 cup goat cheese

Etc.

  • 1/4 cup chopped oil-packed sun-dried tomatoes

  • 1/4 cup chopped jarred marinated artichoke hearts

  • 1 tsp. lemon zest

  • Baby arugula

Preparation

Heat a griddle or large cast-iron skillet over medium. In a small bowl, mix the mayonnaise and the garlic. Slather on one side of each slice of bread. Build sandwiches with the cheese, sun-dried tomatoes, artichoke hearts, lemon zest, and bread, spread-side facing out. Cook, turning once, until the bread is toasted and the cheese is melted, about 3 minutes per side. After cooking, open up each sandwich and add a small handful of arugula.
