John's Cocktail: Green with Envy

This bright, springy cocktail from Rachael’s hubby, John Cusimano, is packed with so many greens, it’s almost good for you! (Almost.)
John's Cocktail Green with Envy

  • 1/4 cup sugar

  • 6 slices of English cucumber

  • 2 handfuls of arugula

  • 4 oz. gin

  • 1/2 oz. Green Chartreuse liqueur

  • 1 oz. fresh lime juice


1. In a small saucepan, heat the sugar and 1/4 cup water over low, stirring until the sugar dissolves, about 2 minutes. Let the simple syrup cool for about 10 minutes.

2. Using a muddler or the handle on a wooden spoon, muddle 4 cucumber slices in the bottom of a cocktail shaker. Set aside 2 arugula leaves. Add the remaining arugula to the shaker and muddle until gently bruised. Add the gin, liqueur, lime juice, and 1 oz. simple syrup and fill with ice. Fit the shaker with a strainer lid; shake well. Double-strain the mixture by pouring from the shaker through a fine-mesh strainer into 2 chilled coupe glasses. Garnish with the remaining cucumber and the arugula leaves.
