Jerk-y Shrimp & Mango Pasta Salad

Ingredients

Pasta

  • 1 lb. penne rigate

Toss-Ins

  • 1 lb. cooked shrimp, halved lengthwise
  • 1 1/2 cups chopped, peeled mango
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 2 tsp. grated ginger
  • Salt and pepper

Dressing

  • 1/2 cup EVOO
  • 3 tbsp. white wine vinegar
  • 5 tsp. jerk seasoning marinade

Preparation

In a large pot of boiling, salted water, cook the pasta according to package directions. Drain, then rinse under cold water. Transfer the pasta to a serving bowl. Mix pasta with the toss-ins and the dressing.
