- 2 tablespoons EVOO
- 4 tilapia or catfish fillets
- 2 tablespoons jerk seasoning
- 6 cups watercress
- 1 ear corn, kernels cut from cob
- 2 tablespoons fresh lime juice
In skillet, heat 1 tbsp. EVOO over medium-high. On plate, season fish, then sprinkle with jerk seasoning. Cook until flaky, 3 to 4 minutes per side. In bowl, toss all remaining ingredients; season. Serve with fish.
