Jammy Eggs with Fried Capers

Jammy eggs are the new deviled eggs.

Makes 8 eggs


  • 2 tbsp. chopped shallot

  • 1 tbsp. red wine vinegar

  • 4 eggs

  • 3 tbsp. grapeseed oil

  • 1 tbsp. capers, drained and patted dry

  • EVOO, for drizzling

  • Chopped fresh flat-leaf parsley and crushed red pepper, for garnish


In small bowl, toss shallot and vinegar. In medium bowl, prepare ice bath. In saucepan fitted with steamer basket, bring a few inches of water to boil. Add eggs to basket. Cover; cook for 7 minutes. Cool in ice bath. In small skillet, heat grapeseed oil over medium-high. Fry capers until crispy, 3 minutes; drain on paper towels. Peel eggs; halve lengthwise. Drizzle eggs with EVOO. Top with shallot, capers, parsley, and red pepper.
