Jambalaya Fried Rice

Show your leftover grains some love with a fun way to stir things up.

  • 2 tbsp. vegetable oil
  • 1 cup (6 oz.) deveined peeled shrimp
  • 1 cup (4 oz.) sliced andouille sausage
  • 1/3 cup chopped red bell pepper
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped red onion
  • 2 cups leftover rice
  • Hot sauce (such as Tabasco)


In a medium skillet, heat 2 tbsp. vegetable oil over medium. Add shrimp, sausage, bell peppers and onion and stir-fry until cooked and browned in spots, 3 to 5 minutes. Add 2 cups leftover rice and stir-fry until heated through. Drizzle with hot sauce (such as Tabasco).
