Italian Sausage & Bean Soup
This is the soup your fall needs.
Ingredients
3/4 lb. bulk Italian sausage
3 stalks celery, chopped
1 onion, chopped
3 tbsp. tomato paste
3 cloves garlic, chopped
2 tsp. chopped fresh rosemary
4 cups chicken stock
1 can (15 oz.) cannellini beans, rinsed
1/2 cup white wine
Shaved Parmesan and torn basil, for garnish
Preparation
In pot, cook first 6 ingredients over medium-high, stirring often, until sausage is crumbled, 5 minutes. Add stock, beans, and wine. Simmer until thickened, 10 minutes; season. Garnish soup with cheese and basil.
