In small saucepan, bring first 3 ingredients and 2 tbsp. water to boil over high heat. Cook, stirring often, until cherries break down, about 9 minutes. Add cornstarch; boil sauce for 1 minute. Let cool for 10 minutes. Divide ice cream among 4 bowls. Top with cherry sauce, chocolate, and nuts.
