Hot Madras Curried Tofu Salad

  • 1/4 cup mango chutney
  • 3 tablespoons finely chopped cilantro
  • 3 tablespoons vegan mayonnaise
  • 1 1/2 tablespoons hot Madras curry powder
  • 1/2 teaspoon salt
  • 1 14 ounce package extra-firm tofu
  • Cilantro, for garnish
  • Sliced radishes, for serving


Whisk mango chutney, chopped cilantro, vegan mayonnaise, Madras curry powder and salt. Drain one tofu; squeeze dry with paper towels and dice. Toss with curry mixture. Garnish with cilantro; serve with sliced radishes.
