In bowl, mix orange zest and juice, honey, garlic, coriander, and paprika; season sauce. Season lamb. In large skillet, cook lamb in oil over high until medium-rare, about 2 minutes per side. Pour sauce over lamb; cook until sauce is thickened, about 2 minutes. Add olives. Serve over couscous.
