Honey-Glazed Carrots

- Butter
- Pistachios, chopped and toasted
Preparation
Combine 1/4-inch-thick carrot slices with melted butter, honey and just enough water to cover in a saucepan; simmer until carrots are crisp-tender. Uncover and cook until water has evaporated and carrots are tender and glossy. Top with chopped toasted pistachios.
