Herb-Garden Pasta
Ingredients
- Pasta of choice
- EVOO
- Fresh lemon juice
- Pinch lemon zest
- 1 small clove garlic, grated
- Anchovy paste (optional)
- Big handful chopped fresh herbs, such as parsley, basil, mint and thyme
- Grated Parmesan
Preparation
Cook pasta in boiling, salted water until al dente; drain, reserving some of the cooking water. In a large bowl, whisk a generous drizzle EVOO, a squeeze of fresh lemon juice, lemon zest, garlic, and a squeeze of anchovy paste (optional). Mix in fresh herbs. Add pasta and a small splash cooking water; toss well. Top with grated Parmesan.
