Heck of a Jicama Slaw

  • 1/3 cup honey (eyeball it)
  • Juice of 2 limes
  • 2 teaspoons hot sauce (eyeball it)
  • 1/2 teaspoon cumin (eyeball it in your palm)
  • 1 teaspoon poppy seeds (one-third palmful, optional)
  • 3 - 4 tablespoons extra-virgin olive oil (EVOO), eyeball it
  • Salt and freshly ground pepper
  • 1 large jicama bulb, peeled and cut into 3-inch matchsticks
  • 4 scallions, cut into 3-inch pieces and sliced lengthwise into thin strips
  • 1 small red bell pepper, seeded and thinly sliced
  • 1 tablespoon finely chopped cilantro (optional)


Combine the honey, lime juice, hot sauce, cumin and poppy seeds in a salad bowl and whisk in the EVOO. Season the dressing to taste with salt and pepper. Add the jicama, scallions, bell pepper and cilantro and toss. Adjust the seasonings.
