Ingredients

  • 3/4 pound haricots verts (skinny green beans), trimmed
  • 3 large shallots, halved lengthwise and very thinly sliced
  • EVOO, for drizzling
  • 3 tablespoons fresh thyme, chopped
  • Salt and pepper

Preparation

Position a rack in the center of the oven and preheat to 450 degrees. Line a rimmed baking sheet with aluminum foil, matte side up. In a large bowl, toss the green beans and sliced shallots with EVOO to lightly coat. Season the green beans with the chopped thyme and salt and pepper; toss again. Roast until the green beans are crispy and browned in spots, about 15 minutes. Toss with tongs and serve alongside my Celebration Burgers.
