  • Put flour, 1 beaten egg and panko in three separate bowls. Coat ham in flour, then egg, then panko. In nonstick skillet, cook ham in EVOO over high, 3 minutes per side, then fry remaining 2 eggs. Top ham with mustard, watercress and eggs; season.
