Ingredients

  • 1 cup diced potato
  • 1 cup diced ham
  • 3 slices bacon, chopped
  • 8 eggs
  • 3/4 cup grated cheddar
  • 1 tomato, diced
  • 1/2 cup arugula

Preparation

In cast-iron skillet, cook potato, ham and bacon over medium, stirring, 8 minutes. In bowl, whisk eggs and cheese; season. Add to skillet; cook, stirring, until almost set. Top with tomato and arugula and cook until set, about 2 minutes.
