Halloumi Mini Skewers

Halloumi Mini Skewers

  • 16 mixed pitted olives (1 cup)
  • 7 oz. Halloumi cheese, cut into 16 cubes
  • 4 thin slices of lemon, quartered
  • 2 tbsp. olive oil
  • 1 tbsp. chopped fresh flat-leaf parsley
  • 1/4 tsp. crushed red pepper


On eight 6-inch skewers, thread olives, Halloumi, and lemon slices. Brush skewers with 1 tbsp. oil. Grill over medium heat until browned, 2 minutes per side. Transfer to platter. Drizzle with remaining 1 tbsp. oil. Top with parsley and crushed red pepper.
