Guinness Marinade

  • 1 14.9 ounce Guiness
  • 1/3 cup EVOO, plus more for brushing
  • 1 red onion, sliced into rounds
  • 2 tablespoons chopped flat-leaf parsley
  • 1 1 1/2 pound flank steak, at room temperature


In bowl, combine Guinness, 1/3 cup EVOO, onion and parsley. Add steak; let marinate in fridge 30 minutes. Pat dry, brush with EVOO and season with salt and pepper before grilling. Grill onions with steak, if desired.
